Bar Spotlight Series: In this series, we highlight the best bars across the world offering incredible non alcoholic drinks on their menu.

When it comes to making a great non alcoholic Irish Coffee, they key is to use strong freshly brewed coffee and real heavy whipping cream that you've whipped yourself. It may sound simple but we wanted to make sure we got it right, so we went to New York City's most popular Irish Pub to see how they do it.

This recipe comes from the team at Dead Rabbit, a bar highlighting Irish spirits, cocktails and beers but they're even more specifically known for their Irish Coffee. Dead Rabbit has even won Best International Bartender, Best Bartending Book, World’s Best Cocktail Menu, and World’s Best Bar! Their reason to be is sharing their passion for contemporary Ireland with the whole world. You'll be hard pressed to find a better teacher on how to make the iconic Irish Coffee.

This NA Irish Coffee recipe is inspired by Dead Rabbits' new sister bar that's located inside Moynihan Train Hall in Manhattan, The Irish Exit. The bar's unique concept is made to serve on-the-go travellers looking for an afterwork cocktail, neighborhood meetup, or simply a delicious Irish twist on their coffee cravings! They've named their cocktail The Irish Cawfee-Ish and it's a hearty respite amidst the bustling crowds of New York City. It features just a few simple ingredients, like Seedlip Spice 94, Coffee, Demerara, Whipped Cream, and Nutmeg.

Traditionally, Irish Coffee is made with Irish Whiskey, but we're skipping the booze and opting instead for Seedlip Spice 94, a warm-spiced botanical blend with notes of allspice, cardamom, and cinnamon. These spices add warmth and depth to your non alcoholic Irish Coffee, replicating some of the spicy, oaky characteristics found in whiskey. To be sure, your coffee and cream will be the main starring flavors, but using Seedlip Spice 94 will add a touch of sophistication to round out the entire Irish Coffee profile.

Non alcoholic Irish Coffee ingredients you'll need

  • 1 oz Seedlip Spice 94
  • 1 cup freshly brewed coffee
  • 1 to 2 tablespoons demerara, depending on your sweetness preference
  • 1/4 cup whipped cream
  • Nutmeg, for garnish
